We ate the last slice of the Thanksgiving pumpkin pie yesterday and for the first time, I decided to roast the pumpkin I was using as decoration. Thanksgiving may be over but I’m still craving a bit of that Thanksgiving magic. I also, have a whole Tupperware full of pumpkin purée just asking to be turned into something delicious. So, pumpkin bread with a cream cheese swirl and cinnamon streusel topping will hit the spot.
Ingredients:
For the pumpkin bread:
198g (1 cup) coconut oil, melted
213g (1 cup) brown sugar
189g (1 cup) white sugar
4 eggs
425g (15oz) pumpkin purée
152g (2/3 cup) water
400g (3 1/2 cups) flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoon salt
1 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon vanilla
For the cream cheese swirl:
113g (4oz) cream cheese
28g (1/4 cup) powdered sugar
For the streusel:
60g (1/2 cup) flour
71g (1/3 cup) brown sugar
57g (1/2 stick) butter, browned
Good pinch of salt
Method:
Pre-heat the oven to 350 degrees and line a 9"x5" loaf pan with parchment paper.
First add the coconut oil, brown sugar, and white sugar together and mix till light and fluffy. Next, add the eggs, one at a time mixing after each egg. Next at the pumpkin purée, water and vanilla extract, mix until well combined. Lastly, add the flour, baking powder, baking soda, cinnamon, nutmeg and salt and mix until just combined. Set that aside.
Now, mix the cream cheese and powdered sugar together for the cream cheese swirl. Then mix the flour, brown butter, brown sugar, and salt together for your streusel topping.
Plop half the batter in the loaf pan and smooth it out. Then, put the cream cheese and top with the other half of the batter. Sprinkle over the streusel topping and bake. For 75-90 minutes.
A few tips:
Place a cookie sheet under the pumpkin bread to catch any overflow.
You can also tent the bread with aluminum foil if the top starts to get too dark.
This sweet treat goes wonderfully with your afternoon coffee or tea. My kids love it while they are doing their schoolwork for a little pick me up. But really, it’s good anytime.
