Nourishing Chicken Noodle Soup

I don’t know about you, but for the past few days, I have been feeling under the weather. My kids and I have all had the sniffles and the cold wind is really chilling us to the bone. So for lunch today, I wanted to make something cozy, warm and nourishing. I made a big batch of chicken stock the other day so now it’s time to make nourishing chicken noodle soup. Soups are great because, you can really add whatever vegetables you have in your fridge. Today, I have a potato, carrot, and onion. I also added lots of garlic and some turmeric to help with our immune systems and ward off any colds.

Ingredients:

2 tablespoons olive oil

2 tablespoons butter

1 chicken breast and 2 chicken tenders (or any leftover chicken you may have)

1 medium, white onion, diced

3 medium carrots, diced

4 medium yellow potatoes, diced

4 cloves of garlic, minced

8-10 cups chicken broth

1 bay leaf

2 sprigs fresh rosemary

1 teaspoon turmeric powder

4oz egg noodles

2 handfuls, baby spinach

Salt and pepper, to taste


Method:

Salt and pepper the chicken, and in a large Dutch oven, add the olive oil and butter. Brown the chicken on both sides. Don’t worry about cooking the chicken all the way through at this point, it will finish cooking in the soup later. Remove the chicken to a plate.


Then add the onion, carrot, potato, and garlic. Salt and pepper as you go. Place the lid on and allow the vegetables to soften for a few minutes. In the meantime chop up the chicken. Add the chicken back to the pot. Add the chicken stock, Bailey leaf, and rosemary. Placed the lid back on, and allow the soup to simmer for 20 minutes.


Next, add the egg noodles and simmer another 10 minutes. Lastly, add the cream and spinach. Simmer until the spinach has just wilted. Serve with a big slice of sourdough bread.

This soup really hit the spot today. If you happen to have any leftover, you can store it in the refrigerator for a few days. Just add a more chicken broth if the soup gets too thick for your liking. Enjoy!
