Date Night Dinner

Last year my husband and I committed ourselves to a date night once a month. We agreed that it didn't matter what we did as long as it was quality time, no phones on the table. We've had a few adventures over the year. We have gone to the shooting range, checked out a few Korean bakeries that I was dying to try. We've been to a comedy club and watched noodles being pulled at one of our favorite ramen soup restaurants. Sometimes the kiddos stay the night at Lola's house. My husband and I stay in, pop a bottle of champagne, make a fabulous steak dinner for two and watch a new movie on Prime.

Ingredients:

For the steak

1 steak, large enough for two people

Salt and pepper, to taste

2 tablespoons olive oil

2 tablespoons butter

1 large rosemary sprig

For the potatoes

6 medium yellow potatoes, peeled and cut in large chunks

4 large cloves of garlic

1/4 cup beef tallow

2 tablespoons butter

salt, to taste

For the green beans

8oz frozen French green beans

2 tablespoons butter

salt and garlic powder, to taste


Method:

Pre-heat the oven to 375 degrees.

In a large pot, boil the potatoes and garlic for about 10 minutes. Drain them in a colander and toss them a few times to ruff them up a bit. Place a cast iron skillet on medium heat on the stove and add the beef tallow and butter. Once the fat is melted add the potatoes and place it in the oven for 30 minutes.


Next, generously salt and pepper the steak and set aside. The steak will cook more evenly if it is at room temperature.


When the 30 minutes are up, take the potatoes out of the oven and give them a smash with a fork then place them back in the oven for another 30 minutes.


In a cast iron skillet, add the butter and olive oil and place on the stove on medium high heat. Once the fat is melted and the pan is hot add the steak. I like to place a lid on it to help it cook and keep my stove top a little cleaner. When you flip it over, add the rosemary. Cook the steak until desired doneness. We like ours medium rare. Once it's done, place on a cutting board to rest.


In a large pot, place all the ingredients for the green beans. Place on the stove and heat everything up, giving them a toss now and then. Once the potatoes are done, serve everything up and enjoy! We love our steak with my homemade chimichurri.

Date nights don't have to be anything extravagant, a simple walk in the park sipping hot chocolate while you hold hands, is all you need to reconnect with one another. I hope you take this Valentine's Day to remember the small things, the sweet nothings that you do for one another that can make all the difference in the world.
