Chocolate Dipped Almond Biscotti

I think homemade Christmas gifts are the best gifts one can receive. I made these chocolate dipped almond biscotti last year as gifts for my family and a few neighbors. They were a real hit, so this year I think they deserve an encore! Chocolate and almond are a classic biscotti combination but, I give it a small twist by adding cardamom to the dough, giving it all the holiday feels.

Ingredients:

56g (1/2 stick) butter, room temperature

46g (1/4 cup) coconut oil

147g (3/4 cup) sugar

3 eggs, room temperature

1 teaspoon vanilla extract

1 teaspoon cardamom

1 teaspoon baking powder

360g (3 cups) all-purpose flour

188g (2 cups) sliced almonds, toasted

About 1 cup, semi-sweet chocolate chips, melted.


Method:

Preheat oven to 375°F, have baking sheet lined with parchment paper ready.


In a large bowl, beat the butter, coconut oil, sugar, and vanilla together then add the eggs one at a time mixing well after each addition. Scrape the sides of the bowl to ensure everything is well incorporated next. Add the flour, baking powder and cardamom mix until just combined then, add the almonds and mix until they are distributed throughout the dough.


Transfer the dough to the parchment line, baking sheet and cut in half. Form each half into a flat log using your fingers. Bake for 20 minutes then remove from the oven and allow to cool slightly for 10 minutes. Turn your oven down to 300°. Once the logs have cooled, slice each log into eight biscotti cookies. Return them to the oven and bake 15 minutes, flip them over and bake another 10 minutes. Allow them to cool completely before dipping the biscotti into the melted chocolate.
